Nigerians are good with cooking excess food that won't be consumed at once so the leftover is reheated over and over again until the food becomes Nutritionally useless. Too much application of heat to food depreciates the value of the food.. Is true we warm our food mainly for preservation purposes and because some people like their food hot.
If you have cooked food that you aren't
going to eat straight away, cool it as quickly as possible (ideally within 90 minutes
and then store it in the fridge. Make sure your fridge is between 0°C and 5°C. About a third of the food we buy ends up being
thrown away and most of this could have been eaten. One of the main reasons for throwing food away is because people
cook and prepare too much. Try to cook only as much as you need.
But if you do cook too much, using leftovers is a good way to reduce theamount of food you waste and save money too, as long as you do it safely. Don't keep leftovers for longer than two days!
If you stay where light is an issue and you can't refrigerate your food until you are ready to consume it, then take this note, just prepare the right amount you can consume at once so as to gain the nutrients in the food and while cooking ensure your food cooks well to avoid quick spoilage because of the survival of some unwanted bacteria due to the food not properly cooked.
